Hi,
I've got a whole house that needs replastering and I'm contemplating doing it myself. Well I'll give one room a try first and see how that goes.
I've heard that you put up the ceiling sheets first, then the wall sheets (so that the edges of the ceiling are sitting on top of the wall sheets).

This sounds like common sense... would you agree?

If your using cornice it really doesn't matter in my experience as there is a gap between wall and ceiling sheets

I put the wall sheets up first then the ceiling, but if I was to do it again I would definately put the ceiling sheets up first. Ours were 4m long and get a bit unweildly 3m up in the air so I had a few dents etc to fix.

Always do ceilings first , gravity is a wounderful thing , if you do walls first they'll possibly get damaged while your doing your ceiling - backblocking mix gets on the walls accidental glue flick ladders dint or testles bump.
Get the hard one out of they way first walls are pretty easy:2tsup:
Good luck.
