May sound a fairly simple question. How would you normally fix the end of bearers to existing brick pillars

There will be a Pryda bracket to do the job. ankascrewed or dynabolted to the pier. Lot of 'buts' though - better to give more info on what you propose - how high is the deck for example. It is often easier to lay a ledger across a number of the pillars affixed to them (sometimes sitting on angle brackets) and simply attach bearers onto it - allows more flexibility in layout too.

You can take timber posts down to the pillar footing and/or attach them to the face of the pier using ankascrews/ dynabolts and then the bearer is attached to that post. Plenty of options that work fine. Depends on your knowledge skill and tools - and whether you have someone to help - Pryda are easy for one person to do as they can be held in place, holes marked & drilled and away you go.
