We have sagging ceiling joists in our gable style home.
I want to know the best and most ecomnocial method of fixing this problem. And if it can be done by a handymen?

It sounds as though the span for the joist is too great, you prolly need some sort of hanger beam above the joists.

How big is the room or rooms
which way do the joists run
Are the walls at the sides of the joists capable of carrying some load
Are there already hanging beams that have sagged as well
How much room above the centre of the joist span
How well are the joists held down at their end fixing
How bad is the existing sag

You say it is a 'gable style' house, so are you referring to a vaulted ceiling?
If not stay away from a suspended ceiling, if the joists are sagging, this will only add to the load on them, increasing the problem. You must get to the source.
Have any internal walls been removed? If so, were they supporting a hanging beam? If you don't know what a hanging beam is, this is a deep section beam positioned above the joists which support them mid span, the hanging beam has to be supported each end and fixed to the joists on alternate sides to prevent it from rolling.
Many of the modern truss chippys dont understand these old cut roof systems, so if you need help get an oldtimer.
