You say it is a 'gable style' house, so are you referring to a vaulted ceiling?
If not stay away from a suspended ceiling, if the joists are sagging, this will only add to the load on them, increasing the problem. You must get to the source.
Have any internal walls been removed? If so, were they supporting a hanging beam? If you don't know what a hanging beam is, this is a deep section beam positioned above the joists which support them mid span, the hanging beam has to be supported each end and fixed to the joists on alternate sides to prevent it from rolling.
Many of the modern truss chippys dont understand these old cut roof systems, so if you need help get an oldtimer.
