Looking at building a hobby shed at 5m x 2m x 2.1 high was wondering if a permit is required for this project as I will be framing it out of 90 x 35 timber and cladding with blueboard.

Check with your local council for their regulations.
My council (and a number of neighbouring councils) allow you to put up a garden shed of less than 10 square metres floor area without a permit* - hence why the 10' x 10' (3.3m x 3.3m) shed is so common around my area!
*you must still comply with any easements & boundary setbacks.
I was planning a similar sized shed to you, but made from colorbond, and the guy at council suggested I do it 4.95m x 2m so that even if there's a slight error in the length, it will fall under 10m2 and still be allowed.
